RAW HONEY ?
Honey in its natural state (purest form) extracted from the comb. Not filtered and not heated. Raw honey is the only form of honey where you will find all the active enzymes still alive. This is what makes it so healthy! Small amounts of pollen, propolis and wax present in raw honey also adds to the health benefits.
HONEY COMB ?
Honey comb is constructed by the bees using the wax they produce. They use this comb structure to store honey, pollen and the queen use this to lay eggs so that the hive can reproduce bees to keep foraging during mainly spring and summer.
THE PROCESS ?
Harvested seasonally in selected natural areas around the Eastern and Western Cape regions of South Africa. The Raw Honey process consists of taking honey frames from the hives usually once per year, only if there will be enough left over for the bees. These frames are extracted in a centrifuge and the honey is allowed to settle in tanks before it goes into high quality food grade buckets , glass jars etc. All honey handling equipment is made of stainless steel to ensure the highest quality end product.
HONEY VARIENT ?
Honey is typically harvested from open veld, bush or forest areas where the bees work on whatever is in bloom. Most of what we produce is derived from a mixture of flowers(multi flora) and therefore not a specific variety. We do micro manage some single floral areas, that differ from year to year to produce a very high quality single floral raw honey and is then bottled in smaller bathes.
ORGANIC ?
Most of what we produce is from an organic origin. Typically harvested from open veld, bush or forest areas where the bees work on whatever is in bloom far away anything that is not organic. A small amount of some crop honey types we handle separately, where chemical spraying is applied to orchards etc. The amount of spraying exposure in the honey is still far less(some types none) than what is applied to, for example fruit after picking.
DECANTING ?
Don't wait too long to decant it into smaller containers due to the possibility of crystallization. Simply decant the bucket into an equal size bucket (pour only half out) then decant the buckets into a large(2L) jug. Use the jug to fill smaller containers. (preferably glass jars) Raw Honey crystalized rapidly at 14 degrees Celsius, try to store it well above this temperature.
CRYSTALLIZED ?
RAW HONEY WILL CRYSTALLIZE FASTER because it is not heated. Some raw honey crystallizes faster than others. This has nothing to do with the quality, but all to do with the flowers the bees visit. Honey from different nectar producing flowers all have a different taste, texture, smell, colour and varying sucrose and fructose levels that determine the crystallization time. Place your glass jar on its side in direct sunlight for a few hours to slowly liquefy the raw honey or take a fork and whip the honey to make it creamy and spreadable.
EXSPENSIVE ?
Honey is like most other produce, the smaller the amount the higher the price. A jar 3 times smaller than a standard jar requires 3 times more labour, cost and time. The cost of small jars is also much higher per volume than larger jars.
BULK DISCOUNT ?
We are not sitting around waiting for the type of client that only want to buy bulk when their stock is depleted, we could simply keep that honey for a while and bottle it when needed through our bottling brand and get a little bit more for our effort. Therefore we only sell discounted large bulk on pre orders to people that are willing to put their money towards high quality stock in advance. This gives us the opportunity to plan our season with more accuracy.
